Pan-Seared Cod with Roasted Red Pepper Salsa

This fresh, light dinner feels like a satisfying way to start out the new year.
I spent an hour on Sunday prepping for this week’s dinner.
So tonight’s dinner was simply cooking the cod.
Dinner was ready on the table in 10 minutes!
The dish is simple, healthy, and delicious.
What a great dinner to start 2017!

這道輕食料理很適合新年的第一天,
週日我花了大約一小時先把一些本週會用到的食材準備好了,
所以今天的晚餐只需要煎個鱈魚,10分鐘就可以晚餐上桌。
這道菜非常簡單,又健康,而且很好吃,
2017年的第一道煮婦晚餐成功!

PREP 準備

Quinoa

1. Quinoa – Combine quinoa with stock and a pinch of salt in a saucepan. Bring to a boil covered. Lower heat, keep covered, and cook until liquid is absorbed, 8 to 10 minutes. Remove from heat when finished to prevent burning / sticking.

藜麥 – 在鍋中加入藜麥、高湯和一點點鹽,蓋上鍋蓋煮開,關小火後繼續蓋上鍋蓋煮大約8-10分鐘,直到藜麥煮熟和湯汁收乾。(週日事先準備好的。)

Roasted Red Pepper Salsa

2. Make salsa – Place onions in the bowl of a food processor. Pulse onions until broken down into small pieces. Drain and rinse red peppers and add to onions with vinegar and capers. Pulse 8 to 10 more times, until ingredients are chopped but small pieces still remain.

做烤紅椒莎莎醬 – 紅洋蔥放入食物處理機中切小塊,加入烤紅椒,紅酒醋和西班牙小酸豆打勻成莎莎醬,如果沒有食物處理機也可以用手切。(週日事先準備好的。)

Broccolini

3. Broccolini – Trim ends and chop broccolini into bite-sized pieces and place into a microwave-safe dish. Toss with some salt. Cover with a damp paper towel and microwave for 2 ½ to 3 minutes, until broccolini is tender but still crunchy.

花椰菜苗 – 切小塊,放入盤子中,鹽調味,蓋上濕紙巾後,以微波爐加熱大約2 ½ – 3分鐘。(週日事先準備好的。)

Lemons

4. Lemons – Slice into wedges.

檸檬 – 切片。

Cod

5. Cod – Lightly salt and pepper.

鱈魚 – 鹽和胡椒調味。

MAKE 烹飪

Cod

1. Heat a frying pan over medium-high heat. Add cooking oil and cod. Sear on both sides until golden brown and cooked through, 2 to 3 minutes on each side.

中大火熱鍋,加入油和鱈魚,煎至兩面金黃煮熟,每面大約2-3分鐘。

Lemon Quinoa with Broccolini

2. Reheat quinoa and broccolini if made ahead. Toss quinoa with broccolini, lemon juice and olive oil. Season with some salt and pepper.

如果跟我一樣事先準備好了藜麥和花椰菜苗,加熱,藜麥和花椰菜苗拌上些檸檬汁和橄欖油,鹽和胡椒調味。

3. Serve cod over quinoa. Top with salsa and serve lemon wedges on the side. Enjoy!
